For this special season, Ellie thought of dishes that fill the soul, and comfort as a huge hug. A new menu that tastes like those family meals, the warmth of home, those accumulated kisses, those caresses for the soul, those long-awaited reunions. And what better than to ask the chefs in our kitchen about their favourite dishes, the recipes of their family, those dishes that are like an embrace from your mother or grandmother. This is how Ellie has created the new Autumn & Winter menu: "From María del Mar, we have a pear and almond tart with cinnamon syrup and vanilla crumbs, that she cooks on Sunday, when the whole family gets together at home".

For Gema, "her hugs" are the 'Albondigas Castellanas', chicken meatballs in tomato sauce with chorizo, peas and rosemary and garlic potatoes, a traditional recipe from her Colombian family.

The contribution of the new assistant chef, Rocio, is the 'pide', a Turkish pizza. There are Turkish 'pide' of spicy chicken, tomato and parmesan cheese, of goat's cheese, cherry tomatoes and oregano, with Goat's cheese, cherry tomatoes and oregano, vegetarian, even of beef with prunes and thyme, a recipe inspired by one of the classics of Corredera 55 such as 'croquetas' of retinto beef with whisky cream sauce.

For Ellie? “My hugs are our famous 'Haggis' of local morcilla with secret spices on a bed of caramelised onions, mash potato with a whisky cream sauce, an original Scottish recipe with a local touch".

In meat, we find, among other proposals, the whole roast ‘Spatchcock’ chicken to share marinaded with damascan lemon, garlic, capers and rosemary, a traditional recipe belonging to Ellie's Scottish grandmother, Sheila Dewar (from the famous family of Dewar whisky, creators of 'White Label' among others), “the chicken is baked with vegetables, some apple, sherry, garlic and lots of love”. This is a very popular dish, especially on Sundays, "at weekends our guests pop in with a notebook or a newspaper to eat the chicken here, as if they were at home, as the atmosphere inside is very warming and familiar". And not only on Sundays, on a rainy winter's day (not many but there are some!) Ellie offers different types of creams and soup such as her winter warming Chicken, noodles, lemon, ginger and turmeric soup, a great medicine for body, mind, and soul. The menu also includes chestnut, chorizo and saffron soup and beetroot, sweet potato and goat cheese with pumpkin crisp.

We cannot forget about the sea. Corredera 55 offers the greatest variety of fish and seafood dishes in Vejer. One of the most popular proposals is the fish of the day filled with fresh spinach, vine tomatoes, prawns and rosemary scored with Damascan lemon baked in Cava and drizzled with salsa verde; other dishes are the Guiso Catalán - a seafood stew of hake, mussels, prawns, potatoes and tomato sauce with saffron and garlic, the octopus legs on the grill served with garlic & soya mayonnaise served with a side salad or the seared red tuna on the grill in sesame seeds on a bed of 3 types of Algas and samphire from the coast of Cádiz dressed in soya, ginger and lime...
 

Corredera 55 is famous for its desserts, which deserve special mention after all "a life without desserts is possible but pointless" says Ellie. The menu is taken almost entirely from a recipe book that Ellie Cormié's grandmother, gave her when she was 12 years old, "some 90% of the dessert menu comes from this holy grail". After last year's success,  the 'Cranachan' is back on the menu with fruits of the forest, whisky cream, nuts and local honey from Grazalema. Granny Dewars favourite recipe!
